Black Bean Brownies

Ingredients

  • 1 can (15 ounce) black beans (rinsed and drained)
  • 2/3 cup honey
  • 1/3 cup cocoa powder
  • 1/3 cup coconut oil
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/2 (8 oz) package semi sweet chocolate chips

Directions

  1. Preheat oven to 360 degrees F

  2. Purée black beans, honey, cocoa powder, coconut oil, eggs,baking powder, and salt in a food processor until smooth; stir chocolate chips into black bean mixture.  Pour into a greased baking disk.

  3. Bake in the preheated oven until the top is dry and the edges have started to pull away from the sides of the pan, about 35 minutes.  Let cool at least 10 minutes before cutting.
