Zesty Quinoa Salad


  • 1 cup dry Quinoa
  • 1/2 English cucumber
  • 1/2 pepper (any color)
  • 1 bunch of parsley
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 tsp chili powder or any spice you love!
  • Fun Options: Garlic & Herbs or Lemon & Herbs or Dill fresh or dried... You choose!
  • Sea Salt to taste


  1. Bring 2 cups of water to a boil.

  2. Rinse: Quinoa in cold water.

  3. Stir into pot of boiling water and add a pinch of salt.

  4. Reduce heat and simmer covered 10-15 minutes until all the water is absorbed and quinoa grains are transparent.

  5. Dice very fine: Cucumber, tomato, pepper, green onions, parsley.

  6. Mix: olive oil, lemon juice, chili powder or any other herb options altogether

  7. Pour: hot quinoa into oil mixture with and add chopped vegetables.

  8. Refrigerate at least one hour before serving.
